Like many of their hospitality amigos, the owners of Carbòn in Bondi were forced to close their doors when COVID-19 hit Australia’s shores. However, rather than waste time swizzling margaritas, Carbòn’s owners decided to redesign the venue’s interior.
Carbòn’s former darker, romantically-red-hued look is gone – making way for a light, white washed interior detailed with natural fibres and light woods. Think of a traditional hacienda on the gleaming shores of a Mexican coastal town – with a touch of the Australian spirit, of course!
And, as if you needed an excuse , we’ve got the perfect time to immerse yourself in Carbòn’s redesigned establishment: every Tuesday up until 25 August 2020 for their newest Mexican fiesta – Taco Tuesdays. For this, Carbòn has teamed up with authentic Mexican soda makers, Jarritos, bringing $5 tacos, $12 Palomas (a tequila-infused cocktail with grapefruit flavoured Jarritos), $12 Margaritas and $5 Mexican Tecate beers. Plus, order five tacos or more and get a free Jarritos! Plus, if you’d rather take the party home, these deals apply for both dine-in and takeaway.
Carbòn’s menu isn’t your standard fare either, with all their tacos prepared via woodfire. Sustainability is at the forefront of 2020 dining trends, and Carbòn’s wood-fired approach is no different. It relies on traditional South American ‘parrilla’ techniques – a form of cooking that has a sustainable and symbolic cycle in Mexican cuisine.
This creativity and Mexican authenticity continue over at the bar with cocktails made using premium tequila and mezcal. And, for the first time, Carbòn will begin using Jarritos sodas in their cocktails, with inventive cocktail creations such as the Firebird – a mix of mezcal and mango Jarritos, dusted with a shaved chipotle garnish.
Jarritos has been the national soft drink of Mexico since the 1950s, and Carbòn’s owner, Pablo Galindo Vargas, is excited to share the taste of his Mexican childhood with his patrons for the first time.
Of course, tacos, cocktails and nostalgic sodas aren’t all that Carbòn has to offer. Their menu is full of inventive dishes that are made with fresh produce and designed for sharing – all well worth a taste! For mains, try some woodfire Half Roasted Chicken ($30) with white mole; or Whole Market Fish Zarandeado ($38) with a la talla sauce and green apple. Whilst you’re here don’t forget to add moreish sides to your Mexican feast such as Corn Esquites with chorizo, fresco cheese and chipotle mayo; as well as the tasty Brussel Sprouts ($12) that are adorned with shaved pancetta and smoked almonds.
And, the plus side, not only will you be indulging in traditional Mexican cuisine, but Sydney foodies will also be supporting this local Bondi eatery too!
