We’re here to let you in on a little secret…

There are certain mindsets that can be limiting when approaching ‘healthy eating,’ that end up becoming unhealthy habits. Some who adopt a healthy eating lifestyle will aim to completely cut out everything they are used to or enjoy eating. The reality of this action is that such a harsh and drastic change can end in indulging when the opportunity arises, after a bad day, or when the diet becomes more of a burden than anything else.  Our hack to ‘healthy eating’ is to actually not stop eating the naughty things – but, to eat a healthy version of them. The truth is, unhealthy treats are yum; the secret is, healthy treats are just as yum!

While there are many healthy recipes in cook books and online, we have chosen to feature the ones that we feel stand out as winners. For this first instalment of our favourite healthy treats, we have chosen Banana Chocolate Chip Muffins, a recipe by A Sweet Pea Chef, specifically because they are refined flour and refined sugar free.

INGREDIENTS

5 ripe bananas
1 egg, beaten*
1 tsp vanilla extract
1 1/2 cups of spelt flour (or whole wheat pastry flour)
1/2 tsp ground cinnamon
1 tsp baking soda
1/8 tsp sea salt (pinch)
1 cup 70% cacao dark chocolate (chopped)
1/2 tbsp coconut oil, for greasing muffin tin

METHOD

  1. Preheat oven to 175 degrees C and grease muffin tin with coconut oil.
  2. In a medium mixing bowl, mash the bananas using a fork or potato masher. Add the egg and vanilla. Stir to combine. Set aside.
  3. In a separate mixing bowl, combine the spelt flour, cinnamon, baking soda, and sea salt. Mix well.
  4. Add the dry ingredients to the wet ingredients and stir to combine. Do not over mix.
  5. Fold in the chocolate chips.
  6. Pour the mix into the prepared muffin tin, approximately 2/3 of the way full.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean and tops are golden brown.
  8. Remove and let cool on cooling rack.
