After an exciting facelift, stage one of Republic Hotel’s multi-million-dollar renovation is finally unveiled: INNA Lounge – a luxe new late-night bar which makes up just one level of the beloved four-story building.
With its dark and sexy interiors, INNA Lounge features soft leather booths, low tables and modern Australian artwork adorning the walls. But the real showstopper is the oversize marble bar home to one of the largest agave collections in Sydney.
To play on INNA’s sophistication and suave, guests are promised a delicious assortment of savoury bar snacks curated by chef Derek Bell including Moreton Bay Bug Rolls as well as sustainable caviar served with potato crisps and creme fraiche.
If the expansive collection of over 400 spirits and 200 wines has you curious, INNA Lounge’s inventive cocktail list featuring reimagined household staples and iconic Australian ingredients will have you feeling nostalgic. Think the tropical and refreshing Biscuit Tin as well as the Milo infused Mayne Meal espresso martini, paying homage to the man himself Thomas Mayne (inventor of Milo).
A flavourful experience nonetheless, INNA is an intimate lounge-style bar welcoming up to 70 guests. Part of the Republic Hotel which has been an iconic Sydney fixture since 1865, is now evolving into a four-level landmark. See website for more updates.
