We’re calling it. Tayim’s not-so-tame cocktails are Sydney’s best this winter.

The hidden Middle Eastern-inspired bar and restaurant in The Rocks has launched their new winter cocktail menu and it’s sensational. Within the 19th-century sandstone building, Tayim’s bar manager, Xander Ramirez and his mixology team have concocted six new stunning, delicious and curious cocktails – some savoury, some sweet and some with a sour hint that tantalises you to have another.

The new cocktails, like Tayim’s dishes, have been influenced by Middle Eastern flavours and ingredients to create reimagined twists on the classics. Tayim’s latest cocktail reinterpretations blend traditional Middle Eastern spirits, such as aniseed-flavoured Arak and sweetened teas, including Rose Hip Tea and Moroccan Mint Tea, with on-trend spirits, including Archie Rose Gin and Plantation 3-Star Rum.

In a city overloaded with espresso martinis, it’s rare to find one that stands out among the rest. But we are happy to say Tayim has found a way. This cocktail infuses the flavours of the Middle East and Australia with the use of Turkish Coffee and our iconic Milo. Yes, Milo! The Bedouin Espresso is made of vodka, coffee liqueur, Arak, Turkish coffee and clad with the delicious malt-chocolately-ness of Milo. The use of Arak instantly evokes the smell and taste of aniseed, however, when paired with Milo, a sensational chocolate-liquorice combination is formed.

Inspired by the Middle Eastern traditional mint-infused lemonade, the Limona’na is a refreshing nod to the traditional, as well as a delicious lunge into modernity. Tastefully mixed with Plantation dark rum, citrus, toasted cardamom, Moroccan mint tea and ginger, this is the cocktail that is packed full of flavour, with a hit of spice and sourness which will keep you intrigued and thirsting for another. If you’re a rum lover who is looking for the unusual, the Little Ramos is for you. The cocktail includes Plantation 3-star rum, citrus, mango, pineapple, chilli and cream harmoniously tumbled together to create a creamy, complex and sophisticated cocktail.
