It’s mid February already, which means you’re either beginning your alcohol-free fasting February or wishing you were. Thankfully, we’ve teamed up with five restaurants around Melbourne to create some delicious mocktail recipes.
Get ready to shake up and enjoy your FebFast!
Chamomile Cooler
Ingredients:
– 2 tsp chamomile tea
– 250mL water
– 250g sugar
– 15mL chamomile syrup
– 60mL apple juice
– Soda
– Ice
– Cucumber slice and mint for garnishing
Method:
Chamomile Syrup
1. In a saucepan, combine chamomile tea with water.
2. Without boiling, add sugar and stir until dissolved. Remove from heat, cool, strain and transfer to a bottle.
Mocktail
1. Combine chamomile syrup with apple juice in a tumbler.
2. Fill glass with ice and top with soda.
3. Garnish with cucumber slice and mint sprigs.
Cucumber Yuzu
Ingredients:
– 15mL yuzu juice
– 15mL cucumber juice
– 5mL honey water
– Capi yuzu soda
– Ice
Method:
1. Add the yuzu juice, cucumber juice and honey water into a cocktail shaker and stir.
2. Add enough ice to fill a tall glass and then pour the mixture from the cocktail shaker over the ice in the glass. Finally, top up with the Capi yuzu soda.

Ginger Lemonade Mocktail
Ingredients:
– Dash of ginger juice
– 15mL orgeat syrup
– 10mL lemon juice
– Splash of Angostura bitters
– Capi ginger beer
– Ice
– Ginger foam for garnishing
Method:
1. Add the fresh ginger juice, orgeat syrup, lemon juice and Angostura bitters into a cocktail shaker and stir.
2. Add enough ice to fill a tall glass, then pour the mixture from the cocktail shaker over the ice and top up with the ginger beer.
3. Garnish with ginger foam and enjoy!

Ginger Mojito Mocktail
Ingredients:
– 30mL real ginger puree
– 30mL fresh lime juice
– Fever Tree ginger beer
– 4 – 5 sprigs of fresh mint
– 2 inches of fresh ginger
Method:
1. Dice ginger and gently muddle half of the amount in the shaker to release the aroma.
2. Add 8 fresh mint leaves, ginger puree and fresh lime juice to shaker. Add ice and shake.
3. Pour half of the contents in the shaker into a highball glass. There should be some mint, ginger and ice in the serving glass.
4. Strain the remaining contents into the shaker.
5. Top with ice and Fever Tree ginger beer.
6. Garnish with mint and remaining diced fresh ginger.

Watermelon & Mint Mocktail
Ingredients:
– 50mL fresh salted watermelon juice
– 15mL sugar syrup
– 15mL fresh lemon juice
– 4 – 5 mint leaves
– Soda
– Ice
– Slice of watermelon, mint sprig and lemon wheel for garnishing
Method:
1. Add the fresh salted watermelon juice, sugar syrup and fresh lemon juice into a cocktail shaker and stir.
2. Add enough ice to fill the tall glass and then pour the mixture from the cocktail shaker over the ice and top up with soda.
3. Garnish with a slice of watermelon, mint sprig and lemon wheel.
