Australia, feast your eyes on the most daring collaboration since Vegemite partnered with Cadbury Dairy Milk Chocolate. Introducing the Quattro Formaggi, a quartet of cheese-inspired gelato launching in Adelaide, South Australia for a limited time!

This cheese-flavoured ice-cream range by 48 Flavours and The Smelly Cheese Shop is a culinary collaboration of devilish proportions.

48 Flavours Founder, Brian O’Donnell, says it is important to source the right cheese to deliver a perfect balance of flavours in the ice-cream. This is where the advice of cheese expert Valerie Henbest has been invaluable to bring this partnership to life.

“We are really proud of this new range of flavours all underpinned by cheese as the foundation,” says Brian O’Donnell. “Valerie Henbest and I spent hours at The Smelly Cheese Shop tasting and sampling cheese and exploring flavour pairings until the match was perfect.”

The four new cheese-flavoured ice-creams include:

  • Vanilla and Sage with Woodside Cheese Wrights Goat Curd.
  • Melon and Roasted Almond with Onkaparinga Creamery Triple Cream Cheese.
  • Monte Rosso Section 28 with Orange and Hazelnut.
  • La Casearia Carpenedo Gorgonzola and Pear variegated with Fig and Walnuts.

This new cheesy ice-cream quartet builds upon 48 Flavours’ international award-winning Gorgonzola and Pear variegated with Fig and Walnuts gelati. It is created from Adelaide’s Central Market produce, including The Smelly Cheese Shop, and is the perfect blend of classic Italian flavours.

“Gorgonzola dolce is the sweeter gorgonzola made from pasteurised milk aged for three months to produce a creamy sharp flavour. The cheese is mixed with pear and as it is a mild sweet fruit, [it] blends beautifully, especially when finished with walnuts and organic figs,” said Brian O’Donnell.

Valerie Henbest, Founder of The Smelly Cheese Shop and born in Normandy – the home of camembert – says growing up and eating cheese has shaped her destiny, with this collaboration being another chapter in her cheese legacy.

“Cheese is my love and my life,” says Valerie. “The opportunity to work with Brian and his team at 48 Flavours to develop cheese-inspired flavour gelati was too good an opportunity to refuse. It has been so important to balance all the flavours so one element is not overpowering another.

“We are businesses within the same precinct so working together creates such great synergy and anything that can highlight cheese and showcase our products in a new and unique way is worth exploring, but most importantly all four flavours are simply delicious!”

The limited-edition 1.5-litre take-home tub has been created as a premium offering and will retail for $49.50 to include all four flavours. They can be purchased through the three 48 Flavours stores (Gouger Street, Trinity Gardens and Paralowie in Adelaide) and The Smelly Cheese Shop.

Also, for a limited time at both the 48 Flavours Gouger Street and Magill Road stores, the four cheese gelati flavours will be available to purchase by the scoop. This is the ideal opportunity to taste and sample these melt in your mouth flavour combinations.
